One apiary, one season per jar
Our flagship variety, gathered from the cloud forest wildflower meadows at 1,500 metres in Unión Juárez, Chiapas. Jasmine, stone fruit, and warm spice bloom in sequence through the rainy season. The resulting honey is fragrant, complex, and lightly crystalline — a direct record of the Tacaná cloud forest at peak bloom.
Gathered during the brief coffee blossom season in the Tacaná foothills — barely three weeks a year when the arabica flowers open across the hillside. The resulting honey is intensely aromatic: dark chocolate, nougat, and brown sugar, with a depth that distinguishes it entirely from the wildflower batch.
Our rarest expression, drawn from reserve frames at the highest elevation hives in our apiary. A caramel-forward honey with tropical fruit notes and a faint cinnamon warmth — the result of a single short harvest window that we cannot always predict.
Every jar carries the exact flavour of the place and season it came from. That is the only promise we make — and the only one that matters.
